We at Ladies Leisure know that when it comes to entertaining you don’t always have the time to create the gourmet meal that everybody seems to expect, so with that in mind we decided to quiz some of our dedicated staff about what they do when in a party pinch. The result was these quick recipes that are so easy to make that even the man in your life can lend a hand.

Appealing Appetisers:
Cara’s "Clams Casino"
Serves 4
1/2 cup bread crumbs
4 tablespoons soft butter
2 finely chopped fresh red bell peppers
2 tablespoons fresh finely chopped parsley
1 tablespoon fresh finely chopped green onions
1/2 teaspoon cayenne pepper
24 fresh clams
6 large pieces sliced bacon
Combine bread crumbs, butter, bell pepper, parsley, green onions and pepper, blend well.
Shuck clams, leaving loosened clam meat in one half of shell and discard other half of shell.
Place clams on-half-shell in a baking dish and cover each with about a teaspoon of the casino mixture.
Broil clams 4 to 6 inches from heat for about 3 minutes or until browned.
Garnish with crispy bacon pieces that have been crumbled
Main Courses
Justina's "Oven Roasted Pork"
Serves 4
2 pork fillets, average size
6 tablespoons olive oil (extra virgin if you have)
2 ounces blanched almonds
1 garlic clove, crushed
1 bunch of flat leaf parsley
2 tablespoons freshly grated Parmesan cheese
Salt and pepper
Cut the pork fillets in half crossways and season with salt and pepper. Heat 1 tablespoon of the olive oil in a frying pan and fry the meat for 2 to 3 minutes until browned on all sides. Transfer the meat to a large roasting dish and cook in a preheated medium heat oven for 15 minutes, until cooked through. Remove from the oven, wrap in foil and leave to rest for a few minutes.
Dry-fry the almonds in a clean frying pan, stirring until browned then allow to slightly cool. Place almonds in a food processor with garlic, parsley, remaining olive oil and some salt and pepper to taste. Blend to form a smooth paste and then stir in the Parmesan cheese.
Slice the pork, arrange it on plates with any juices from the meat and serve it with boiled new potatoes and butter with a salad of your choice.
Delightful Desserts
Byron’s "Brandied Ice Cream"
Serves 6
1 large tub vanilla ice cream, softened
1/4 cup brandy
1/4 cup creme de cacao
Grated chocolate for garnish
Combine the first three ingredients and stir well. Pour into a 13 x 9 x 2-inch pan. Cover and freeze until firm. Spoon into individual dessert dishes and garnish with grated chocolate.
